Today was a long cooking day that came together in no time at all.
I began at 05:00, after soaking some black beans over night, I pressure cooked them in my Instant Pot for 45 minutes. Then I drained the beans, set them on the counter to cool, and put a single boneless chicken breast in my Instant Pot, along with 1/2 cup of water, some salt, paprika, cumin, coriander, and chili powder. Added a pinch of avocado oil too. Put the beans in the fridge. Slow cooked that for nine and a half hours. Went to work.
Get home from work, and I diced up some red onion, seeded and diced a jalapeno, sliced some cherry tomatoes, and mashed up two avocados, combined the juice from half a lemon, salt and pepper. Made Guacamole.
While I was doing that, I had removed the chicken from the Instant Pot and put it inside a regular pot on the stove. Added the black beans from this morning. Added the "stock" from the Instant Pot. Simmered that with the diced jalapeno, red onion, and juice from half a lemon (yup, total, I used an entire lemon). Simmered that for about 15 minutes as my rice cooked.
Took two huge bowls from the cabinet, and put about four or five wooden spoons worth of rice on the bottom of each bowl. Then split the chicken mixture, added about four diced cherry tomatoes, a couple hand fulls of cheese, half the guacamole, and tossed it. Then added a bout three tablespoons of ranch dressing.
Let me tell you..... These Burrito Bowls were DA BOMB DIGGITY! And now I've got lunch for tomorrow too.
