Well, I'm broke. Any my partner is pissed. I promised her an iced mocha from our local coffee shop today, but I've only got $4.51 left to my name after I set aside the money for Rent. And that $4.51 went to her so she could afford the $5 food delivery service so that we can order groceries for the next two weeks (EBT).
So, while she's throwing a conniption fit, I'm trying to remain calm through her raging (IYKYK: Something about moons....) And what do I do? I google how to make my own chocolate syrup. I've got chilled coffee from yesterday in the fridge. Problem is that I don't have Corn Syrup (which prevents the sugar from crystalizing in chocolate syrup). But, luckily, I found a scientific remedy. It's all about the ratio of water to sugar. a 2:1 ratio (water:sugar) will cause the sugar molecules to be too far spaced apart to form molecular bonds.

While true chocolate syrup uses Corn Syrup, this is a true poor-person's chocolate syrup. So, it may not be as "rich" as the real thing, but it does get the job done in a pinch.
Chocolate Syrup
1 cup chocolate chips
1 cup water
1/2 cup sugar
1 tsp vanilla extract
1/8 tsp salt
Heat the chocolate chips using a double boiler (or a metal bowl over a small sauce pan, halfway filled with water). The chips will melt pretty quickly. Be sure to use a pot holder to steady the top bowl/pan as you stir the chocolate.
While that's melting, you'll combine the salt, sugar and water (I just used cold water, but hot water would dissolve the sugar better/quicker) in a separate bowl.
Once the chocolate is totally melted, remove from the heat, and slowly mix in the sugar water (aka Simple Syrup), and add in the vanilla extract.
You'll want to probably use a larger bowl and a whisk. This will appear to be totally too runny/watered down. It's fine. This is just going in coffee after all.
After a couple minutes of whisking, and the mixture has cooled down, it will thicken a bit. It tastes chocolatey, and that's the goal, and you want it on the runny side because it's mixing in with cold coffee. For a thicker version, feel free to use like half the simple syrup.
