This is a modification based on Brazilian Limeade (which I'll post a recipe for at the end), and I have to say that I'm very impressed with how this turned out! But why change an already epically tasting masterpiece?
My partner suffers from GERD, or some sort of issue with her gut. I think she's probably slightly lactose intolerant. Shhhh! I won't mention, it if you don't.... Anyway, the original recipe called for three table spoons of Sweetened Condensed Milk, and even that small amount set her off, annnnnnnnnnd, I my brain was seeking a coconut note because Brazilian Limeade is an opaque white, and for some reason, lime is automatically associated with coconut in my brain, so there's that.
3 cups of water
8 limes, juiced
3/4 cups of sugar
14 oz (one can) coconut milk
Blend and chill.
That's it! It really SHOULD be chilled, it tastes WAY BETTER chilled. Do yourself a favor and CHILL this BEFORE you attempt to drink it. And give it a good shake, because it will separate.
Now for the original recipe, Brazilian Limeade:
3 cups water
2 limes
1/2 cup sugar
3 Tbsp sweetened condensed milk
Ice
Blend.
This makes two servings according to the recipe. I'd really like to know how large their drinking vessels are. You'll also notice that I quadrupled the amount of limes and bumped up the sugar in my coconut limeade recipe. That's because I REALLY enjoy the thirst quenching capabilities of limes. And for the sweetness, coconut milk typically doesn't have anything sweetening it, so I added some additional sugar.
Anyway, give it a try, I think you'll like it!
