Alright, I was a little skeptical when my partner absolutely demanded that I pick up some peaches from work and mint. Like, who puts MINT in Lemonade... .with PEACHES? And I'll be the first to admit that I'm not the biggest fan of peaches. Sure, I'll eat them, but I enjoy other things better. Like, if I had a choice between peach cobbler and blackberry cobbler, you better bet that I'd be all over that blackberry!
Anyway, the results are in, and i gotta tell ya... WOW!
This stuff is AMAZING! It's got a not-overwhelming peach flavor, with a hint of mint and the subtle tartness of lemonade, that quenches thirst like a champ. So, you absolutely HAVE to try this.

Minty Peach Lemonade
The sauce:- 4 peaches, diced and pitted
- 1-1/2 cup water
- 3/4 cup sugar
- Juice from 2 lemons (about 1 cup)
- 22 grams of chopped mint leaves (you need to PACK a 1/2 cup measuring cup)
The Ade:
- 5 to 6 cups of cold water
Directions:
- In a large sauce pot, throw all the SAUCE ingredients into it and give it a good stir. Place over medium-high heat (to initial boil) for about 15 minutes. When the mixture becomes fragrant (trust me, your kitchen will smell AMAZING), reduce the heat to low and simmer for another 10 minutes.
- Remove from heat and cool to room temperature.
- Strain the solid bits and press through a metal fine-screened strainer.
- Discard the solid bits.
- Add the remaining water and chill before serving.
- When serving, you'll want to give your jug a good shake or stir.
