I don't really know why I want to talk about this but here we go anyway! Tonight for dinner, my roommate and I are having:

Home fries. Potatoes are really cheap right now! 😊

They're really easy to make. Take a bunch of potatoes, I use between four and eight depending on how much I wanna eat and how small the potatoes are. Then I scrub them off, slice them in to about 1/2 inch slices. Then I'll either divide them into halves or quarters. Throw them in a pot of boiling water for like 20 minutes and drain. I let them rest for a couple minutes while I grab some butter and a little olive oil. Then I coat the bottom of my still hot pot with the melted butter and add potatoes. Sprinkle on some garlic, onion powders and rosemary, gently toss--otherwise you may end up with mashed 'taters! Fry for about five minutes. Oh, and don't forget a shit ton of salt with a dash of black pepper.

So last night, I tried an alteration to the Bean Burger recipe that I use. I wanted to see how Refried Beans would be in the mixture. I must say that I'm really pleased with the results!

For refried beans, it's best to use Pinto beans, because they mash to a really smooth consistency. Here's my secret for cooking dried beans: Grab yourself an Instant Pot. I'll use one cup of dried beans for two cans of beans that are called for in recipes. Pressure cook the beans for 20 minutes. Drain, and this works so much better than simply soaking overnight.

I also cheated. I used one of those cheap Amazon Food Processors to make quick work out of the beans rather than using a fork to mash everything. Yes, I'm a tad spoiled from the days when I actually had spare money, aka Disposable Income to throw around.

Then I pan fried the mashed bean patties (with egg and bread crumbs) in some butter on medium-low heat for about 20 minutes.

When serving, I whipped up some asian mayo (mayo with chili garlic sauce and a dash of Sriracha). De-lish!
 
My hubby ordered pizza for dinner.

Tomorrow, my hubby will probably make quesadilla's for dinner (once I get home from work).
 
I tried to make quesadilla's the other night. They were three cheese with sausage and rice (because we didn't have any ground beef. Turned out pretty good for my first attempt.
 
I ate a banquet mega bowl with penne pasta and meat balls for my dinner tonight. Not too bad but the buffalo mac-n-cheese is way better.
